Meatballs: Take 2

These meatballs had me at meatless! I found this recipe on Betty Crocker's website. I made it last week, but I tried pulling a Food Network's Iron Chef, and well... let's just say I would have been 'Chopped!' I used pecan meal instead of pecans. They turned out dry so I thought I would do another take and make them again tonight, as the recipes instructs. They turned out much better. They have great flavor and texture!


Meatless Meatballs

1 1/2 cups dry mashed potato buds
1 cup shredded cheddar cheese
1 cup chopped pecans
1 cup chopped onion (I just used dry minced onion, same great taste)
2 tbsp soy sauce
1 tsp dried basil leaves
4 eggs, beaten

Heat oven to 450 F. Mix all ingredients together in a bowl. Shape into 1 1/2 inch balls, place in greased pan. Bake 20 minutes or until golden brown.

I decided to use them in spaghetti...
