Potato Glory

Oh... potatoes, how I love thee!! I will eat any form of potatoes. They are so satisfying and flexible- you can make them any way and their taste cooperates. I made this quick and fabulous potato recipe for supper tonight. They were accompanied with fresh, juicy peaches! We are lucky to have several Farmer's Market's in our area. I found this recipe on www.foodgawker.com and got to making it right away!

In a large skillet, heat (medium heat) 1 tablespoon of olive oil. Chop 3-4 cups of red potatoes in 1/4" inch slices. Mince 2 cloves of garlic and combine with sliced potatoes...

Sprinkle in cheese, oregano, and chives and continue to cook until the potatoes begin to brown on both sides. Your finished dish should look like this...

The smell of fresh garlic, the texture of browned potatoes, and the melted and crunchy Parmesan cheese is so inviting! They have such great flavor! It doesn't take long to make this filling, warm, and tasteful dinner.  Enjoy!

Baby Red Potato Recipe

3-4 cups red potatoes, 1/4" sliced
1 tbsp olive oil
2 cloves garlic, minced
1 tbsp oregeno
1/2 cup Parmesan cheese (the stuff out of the shaker works just fine!)
2 tbsp fresh chives

FOLLOW UP TO THIS POST: These had great flavor and taste the night I made them. However, I packed the leftovers for lunch the next day... and well, I wasn't so excited after they were reheated. They seemed to dry out. So, make sure you get the portion size as accurate as you can so you don't have leftovers!
