I have been waiting all week to make these lil' guys for our Sunday brunch! Several of the blogs I follow rave about these doughnut muffins, saying they are the best thing ever. Now, don't get me wrong, these are delicious and according to my hubby they are like a big doughnut hole. So, you can't go wrong-- but, I wouldn't say they are the best thing ever.
My opinion aside, try making them! They are tasty and although they aren't healthy, they are better for you than traditional doughnuts. The best part is you probably already have all of the ingredients to make them!
They smell so yummy fresh out of the oven...
While they are still warm you coat them in melted butter, cinnamon, and sugar... delightful!
Doughnut Muffins
For the muffins:
1 3/4 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
1/3 cup oil
3/4 cup sugar
1 egg
3/4 cup milk
For the coating:
1/4-1/2 cup butter, melted
1/3 cup sugar
1 tbsp cinnamon
Preheat oven to 350 F and grease muffin tin. Combine flour, baking powder, salt, nutmeg, and cinnamon in a medium bowl. Combine oil, sugar, egg, and milk in a large bowl. Add dry ingredients and stir only to combine.
Bake for 15-20 minutes. While muffins are baking, melt butter in a small bowl. In another bowl, combine the sugar and cinnamon.
Shake muffins out of the tin while they are still hot. Dip them in the melted butter and then roll them in the sugar and cinnamon mixture. Enjoy!

OMG... those look super yummy!!! Imagine that they are better warm out of the oven!!!
They ARE super yummy!! I know the ingredient list is a little long, but they don't take long to make at all! Try 'em!
