A Little Insight...

Tonight's dish reminds me to elaborate on why I started this blog. I have made it my personal mission to make your lives easier... one recipe at a time! I don't know about you, but I have read a lot of foodie magazines, books, and blogs. When I search something I want make like, cheesy hashbrowns, a really loooong list of recipes populates and it takes me forever before I finally decide which one to make. My decisions are usually based on pictures and a short list of ingredients. After trial and error, I throw out the bad recipes and keep the good ones... hence, my food swatch.

Because I am vegetarian, I have modified a lot of recipes over the years. I want to teach you how to make those modifications, if you are interested. I want to share tips and tricks I have learned along the way, and I want to save you the search time and show you which recipe of that long list is the best! Baking and cooking can be fun and really rewarding! My recipe book varies so much, that I decided to just share what I make along the way. I don't have any more time than you do, so you can count on my recipes to be short, but tasty!

I complimented these cheesy hashbrowns with vegetarian chicken. (Which you will see in a minute) The only way you are going to believe how good these taters taste, is if you actually try them yourself! I love making this dish because I can make it the night before and when I reheat them, they taste even better! So, I challenge you to add this to this to your menu and let me know what you think...

Cheesy Hasbrowns

1 bag of cubed hashbrowns
1 can of cheese soup
1 can of potato soup
8 oz of sour cream
1/4 cup minced onions (I just use the dry minced onions you find in the spices/seasoning aisle)

Preheat oven to 350 F. Mix all ingredients together in a large bowl. Bake for 45-60 minutes, or until golden brown.


Now, on to the vegetarian chicken. I know, it's seems like an oxymoron, but really if you try it-- you might like it! These are MorningStar Chik'n Tenders...

They have great taste and texture. I encourage you to try them! Just put them in a skillet on the stove top for a few minutes on each side until crisp. MorningStar has an extensive line of meat alternatives. If you are curious about one, just ask me!
